Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz (225 g) cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine cream cheese, chopped spinach, minced garlic, and half of the shredded mozzarella cheese. Season with salt and pepper.
  3. Slice a pocket into each chicken breast and fill with the spinach and cream cheese mixture. Secure with toothpicks if necessary.
  4. Mix breadcrumbs with salt and pepper. Dip each stuffed chicken breast in olive oil, then roll in the breadcrumb mixture.
  5. Place the stuffed chicken in a greased baking dish and sprinkle with remaining mozzarella cheese. Bake for 25-30 minutes until cooked through and golden brown.
  6. Let the chicken rest for a few minutes before serving. Garnish with fresh herbs if desired.
