- 4 boneless, skinless chicken breasts
- 8 oz (225 g) cream cheese, softened
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, chopped spinach, minced garlic, and half of the shredded mozzarella cheese. Season with salt and pepper.
- Slice a pocket into each chicken breast and fill with the spinach and cream cheese mixture. Secure with toothpicks if necessary.
- Mix breadcrumbs with salt and pepper. Dip each stuffed chicken breast in olive oil, then roll in the breadcrumb mixture.
- Place the stuffed chicken in a greased baking dish and sprinkle with remaining mozzarella cheese. Bake for 25-30 minutes until cooked through and golden brown.
- Let the chicken rest for a few minutes before serving. Garnish with fresh herbs if desired.
