- ½ cup unsalted butter, melted

- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar (for the filling)
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- ½ cup heavy cream (for the filling)
- 8 oz semi-sweet chocolate, chopped (for ganache)
- ½ cup heavy cream (for ganache)
- Chocolate spider decorations (optional, for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
- Press the crumb mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let it cool completely.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and vanilla extract, mixing until combined.
- Add eggs one at a time, mixing on low speed until incorporated. Gently fold in sour cream.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Bake the cheesecake for 55-60 minutes until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the chocolate ganache by heating heavy cream and stirring in chopped chocolate until smooth.
- Pour the ganache over the chilled cheesecake and create a spider web design using a piping bag.
- Serve chilled and enjoy!
