Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for the crust)
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (for the filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup heavy cream (for the filling)
  • 8 oz semi-sweet chocolate, chopped (for ganache)
  • ½ cup heavy cream (for ganache)
  • Chocolate spider decorations (optional, for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let it cool completely.
  4. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and vanilla extract, mixing until combined.
  5. Add eggs one at a time, mixing on low speed until incorporated. Gently fold in sour cream.
  6. Pour the cheesecake filling over the cooled crust and spread evenly.
  7. Bake the cheesecake for 55-60 minutes until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  9. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. Prepare the chocolate ganache by heating heavy cream and stirring in chopped chocolate until smooth.
  11. Pour the ganache over the chilled cheesecake and create a spider web design using a piping bag.
  12. Serve chilled and enjoy!

Notes

  • Ensure all ingredients are at room temperature for a smooth batter.
  • Allow the cheesecake to chill for at least 4 hours for the best texture.
  • Use a toothpick to create the spider web effect after piping the ganache.
