- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- 1 cup pecans
- 1/2 cup brown sugar
- 1/4 cup water
- Pinch of salt
Instructions
- Prepare the pumpkin mixture by combining pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and ginger in a saucepan over low heat until warm.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Bloom the gelatin in cold water, then add it to the warm pumpkin mixture and stir until dissolved. Allow to cool slightly.
- Gently fold the whipped cream into the cooled pumpkin mixture until combined.
- Spoon the mousse into serving glasses and refrigerate for 2-3 hours until set.
- Prepare the candied pecans by cooking pecans, brown sugar, water, and salt in a saucepan until well-coated and thickened.
- Top the chilled mousse with candied pecans before serving.
Notes
- Store leftover mousse in an airtight container in the fridge for up to 3 days.
- Keep candied pecans separate to maintain their crunch.
- Re-whip mousse if it becomes dense after refrigeration.
