Ingredients

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 tablespoon gelatin powder
  • 3 tablespoons cold water
  • 1 cup pecans
  • 1/2 cup brown sugar
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Prepare the pumpkin mixture by combining pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and ginger in a saucepan over low heat until warm.
  2. Whip the heavy cream in a separate bowl until soft peaks form.
  3. Bloom the gelatin in cold water, then add it to the warm pumpkin mixture and stir until dissolved. Allow to cool slightly.
  4. Gently fold the whipped cream into the cooled pumpkin mixture until combined.
  5. Spoon the mousse into serving glasses and refrigerate for 2-3 hours until set.
  6. Prepare the candied pecans by cooking pecans, brown sugar, water, and salt in a saucepan until well-coated and thickened.
  7. Top the chilled mousse with candied pecans before serving.
