Ingredients

  • All-purpose flour: 2 cups (240 g)
  • Pumpkin puree: 1 cup (240 g)
  • Fresh cranberries: 1 cup (about 150 g, chopped if large)
  • Brown sugar: 3/4 cup (150 g)
  • Eggs: 2 large
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/2 teaspoon
  • Baking powder: 2 teaspoons
  • Baking soda: 1/2 teaspoon
  • Vegetable oil: 1/2 cup (120 ml)
  • Granulated sugar: 2 tablespoons (for topping)
  • Salt: 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it with cooking spray.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. In another bowl, beat the eggs until light and frothy, then add the pumpkin puree, brown sugar, and vegetable oil, mixing until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold together, then fold in the fresh cranberries.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-22 minutes, checking for doneness with a toothpick.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
