Spiced Pumpkin Blondies with White Chocolate are a delightful treat that perfectly captures the essence of autumn. These blondies are soft, chewy, and packed with the warm flavors of pumpkin and spices, complemented by creamy white chocolate chips.

Ingredients

  • Pumpkin puree: 1 cup (canned or homemade)
  • Brown sugar: 1 cup, packed
  • Butter: 1/2 cup (1 stick), melted
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • All-purpose flour: 1 1/2 cups
  • Baking powder: 1 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/2 teaspoon
  • Ground ginger: 1/2 teaspoon
  • White chocolate chips: 1 cup
  • Salt: 1/4 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking pan by greasing it or lining it with parchment paper.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.
  4. In a large mixing bowl, combine the melted butter and packed brown sugar, then add the pumpkin puree, eggs, and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Fold in the white chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the blondies cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • Use 100% pure pumpkin puree, not pumpkin pie filling.
  • Store in an airtight container at room temperature for up to three days.
