Ingredients

  • Fresh plums: 4 to 5 medium, pitted and sliced
  • Eggs: 3 large
  • Granulated sugar: 1 cup (200 g)
  • All-purpose flour: 1 cup (125 g)
  • Unsalted butter: 1/2 cup (113 g), melted and slightly cooled
  • Milk: 1/2 cup (120 ml)
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/4 teaspoon
  • Vanilla extract: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1/4 teaspoon

Instructions

  1. Wash the fresh plums under cool running water, slice them into wedges, and set aside.
  2. In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy. Add melted butter, milk, and vanilla extract, mixing until smooth.
  3. Sift together the flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl. Gradually add this dry mixture to the wet custard mixture, stirring gently until just combined.
  4. Pour half of the batter into a prepared 9-inch round cake pan, spread evenly, and layer half of the sliced plums on top. Pour the remaining batter over the plums and top with the rest of the plum slices.
  5. Bake in a preheated oven at 350°F (175°C) for 40-45 minutes, or until golden brown and a toothpick inserted comes out clean. Let cool for 10 minutes before transferring to a serving plate.
