Description

Spiced Pear Cake with Fresh Ginger and Cinnamon is a warm, moist dessert filled with sweet pears, fresh ginger, and cozy spices, perfect for autumn.


Ingredients

  • 250g all-purpose flour (about 2 cups)
  • 1 1⁄2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground ginger
  • 1⁄4 teaspoon salt
  • 227g unsalted butter, softened (1 cup)
  • 200g granulated sugar (1 cup)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium ripe pears, peeled, cored, and chopped (about 300g)
  • 2 tablespoons fresh ginger, grated
  • 120ml milk (1⁄2 cup)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the chopped pears and grated ginger with a spatula.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a gluten-free version, use a gluten-free flour blend.
  • If you don’t have fresh ginger, you can use ground ginger, but fresh gives a better flavor and texture.
  • This cake can be made a day ahead and stored at room temperature.
  • For a dairy-free option, substitute almond or oat milk and plant-based butter.
