Description

  • 250g all-purpose flour (2 cups)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 170g unsalted butter, softened (3/4 cup)
  • 200g granulated sugar (1 cup)
  • 2 large eggs
  • 120ml orange juice (1/2 cup)
  • Zest of 1 large orange
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small bowl, mix flour, cinnamon, cardamom, ginger, baking powder, baking soda, and salt.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla extract and orange zest.
  4. Gradually add the dry ingredients, alternating with orange juice, until just combined. Fold in chopped dates.
  5. Pour batter into the prepared cake pan and smooth the top with a spatula. Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
