Description
A moist and rich Spiced Gingerbread Cake filled with the aromatic flavors of ginger, cinnamon, and molasses, perfect for holiday gatherings or cozy afternoons.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons ground ginger
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup unsulphured or dark molasses
- 3/4 cup hot water
- 1/2 cup unsalted butter
- 1/3 cup packed light or dark brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- Optional: 8 ounces full-fat brick cream cheese
- Optional: 2 tablespoons unsalted butter
- Optional: 1 and 3/4 cups confectioners’ sugar
- Optional: 1 teaspoon pure vanilla extract
- Optional: Small pinch each of ground cinnamon, ginger, and cloves
Instructions
- Preheat oven to 350°F (177°C) and grease your chosen baking pan.
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, mix the molasses and hot water, then cream the butter and sugar in a separate bowl.
- Add egg and vanilla to the butter mixture, then combine dry and wet ingredients alternately until just mixed.
- Pour the batter into the prepared pan and bake for approximately 35 minutes.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- If using, prepare cream cheese frosting by beating the cream cheese and butter, then adding confectioners’ sugar, vanilla, and spices.
- Spread the frosting on cooled cake and serve.
Notes
For a vegan version, substitute the egg with a flaxseed egg and use plant-based butter and cream cheese. This cake can improve in flavor after a day or two.
