Description

A moist and rich Spiced Gingerbread Cake filled with the aromatic flavors of ginger, cinnamon, and molasses, perfect for holiday gatherings or cozy afternoons.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground ginger
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsulphured or dark molasses
  • 3/4 cup hot water
  • 1/2 cup unsalted butter
  • 1/3 cup packed light or dark brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • Optional: 8 ounces full-fat brick cream cheese
  • Optional: 2 tablespoons unsalted butter
  • Optional: 1 and 3/4 cups confectioners’ sugar
  • Optional: 1 teaspoon pure vanilla extract
  • Optional: Small pinch each of ground cinnamon, ginger, and cloves

Instructions

  1. Preheat oven to 350°F (177°C) and grease your chosen baking pan.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, mix the molasses and hot water, then cream the butter and sugar in a separate bowl.
  4. Add egg and vanilla to the butter mixture, then combine dry and wet ingredients alternately until just mixed.
  5. Pour the batter into the prepared pan and bake for approximately 35 minutes.
  6. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. If using, prepare cream cheese frosting by beating the cream cheese and butter, then adding confectioners’ sugar, vanilla, and spices.
  8. Spread the frosting on cooled cake and serve.

Notes

For a vegan version, substitute the egg with a flaxseed egg and use plant-based butter and cream cheese. This cake can improve in flavor after a day or two.
