Delicious dessert combining creamy eggnog flavor with warm spices, nestled between soft oatmeal cookies.

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2/3 cup old-fashioned whole rolled oats
- 3/4 teaspoon baking soda

- 1 cup packed light or dark brown sugar
- 2 tablespoons eggnog, at room temperature
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 10 tablespoons unsalted butter, softened (for filling)
- 2 cups confectioners sugar
- 3 tablespoons eggnog, at room temperature (for filling)
- 1/4 teaspoon pure vanilla extract (for filling)
- A pinch each of salt, ground cinnamon, and ground nutmeg (for filling)
Instructions
- Whisk together the flour, cinnamon, nutmeg, oats, baking soda, and salt in a medium bowl; set aside.
- Cream together the butter and brown sugar until fluffy. Add the egg, eggnog, and vanilla; mix well.
- Gradually add dry ingredients to wet; mix on low speed until just combined.
- Chill the dough in the refrigerator for at least 2 hours.
- Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll dough into balls and place on baking sheets, leaving 3 inches between each. Bake for 11-12 minutes.
- Cool cookies on the baking sheet for 10 minutes before transferring to a wire rack.
- For the filling, beat softened butter until creamy. Gradually add confectioners’ sugar followed by eggnog, vanilla extract, and spices; beat until fluffy.
- Assemble by spreading cream filling on the bottom side of half the cookies and sandwiching them with the remaining cookies.
Notes
For a gluten-free option, use gluten-free flour. To make it dairy-free, substitute butter with coconut oil or vegan butter.
