Ingredients

  • 2/3 cup old-fashioned whole rolled oats
  • 3/4 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup packed light or dark brown sugar
  • 2 tablespoons eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 tablespoons unsalted butter, softened (for filling)
  • 2 cups confectioners sugar
  • 3 tablespoons eggnog, at room temperature (for filling)
  • 1/4 teaspoon pure vanilla extract (for filling)
  • A pinch each of salt, ground cinnamon, and ground nutmeg (for filling)

Instructions

  1. Whisk together the flour, cinnamon, nutmeg, oats, baking soda, and salt in a medium bowl; set aside.
  2. Cream together the butter and brown sugar until fluffy. Add the egg, eggnog, and vanilla; mix well.
  3. Gradually add dry ingredients to wet; mix on low speed until just combined.
  4. Chill the dough in the refrigerator for at least 2 hours.
  5. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  6. Roll dough into balls and place on baking sheets, leaving 3 inches between each. Bake for 11-12 minutes.
  7. Cool cookies on the baking sheet for 10 minutes before transferring to a wire rack.
  8. For the filling, beat softened butter until creamy. Gradually add confectioners’ sugar followed by eggnog, vanilla extract, and spices; beat until fluffy.
  9. Assemble by spreading cream filling on the bottom side of half the cookies and sandwiching them with the remaining cookies.

Notes

For a gluten-free option, use gluten-free flour. To make it dairy-free, substitute butter with coconut oil or vegan butter.
