Ingredients

- 180g (1 ½ cups) chopped dates
- 150g (1 ¼ cups) walnuts, chopped
- 200g (1 ⅔ cups) all-purpose flour
- 150g (¾ cup) brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground cardamom
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 3 large eggs
- 120ml (½ cup) vegetable oil
- 1 tsp vanilla extract
- Zest of 1 orange
- 100ml (⅓ cup + 1 tbsp) freshly squeezed orange juice
For the Orange Drizzle:
- 150g (1 ¼ cups) powdered sugar
- 2–3 tbsp freshly squeezed orange juice
- Zest of ½ orange
Instructions
- Soak chopped dates in warm water for 10 minutes if hard, then drain.
- Chop walnuts into smaller pieces.
- In a medium bowl, whisk together flour, baking powder, cinnamon, cardamom, nutmeg, and salt.
- In a large bowl, beat eggs and brown sugar until pale and fluffy, then mix in oil, vanilla, orange zest, and orange juice.
- Fold dry ingredients into wet mixture until just combined, then add dates and walnuts.
- Pour batter into a prepared pan and bake at 175°C (350°F) for 40-45 minutes.
- Prepare the orange drizzle by mixing powdered sugar, orange juice, and zest until smooth.
- Once the cake cools, drizzle the orange glaze over the top.

- Use Medjool dates for best flavor and moisture.
- Store in an airtight container at room temperature for freshness.
- For gluten-free, substitute all-purpose flour with a gluten-free blend.
