- 1 tsp vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- Pinch of salt
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) fresh orange juice
- 1/4 cup (60ml) heavy cream
- 2 tbsp unsalted butter
- Zest of 1 orange
Instructions
- Prepare the carrots and dates by washing, peeling, and grating the carrots, then soaking the chopped dates in boiling water with baking soda for 10 minutes.
- Mix the dry ingredients in a medium bowl: flour, baking powder, cinnamon, ginger, nutmeg, and salt.
- Cream together the butter and brown sugar in a large bowl, then add eggs one at a time and stir in vanilla extract.
- Fold in the grated carrots and soaked dates into the butter mixture, then gradually add the dry ingredients until just combined.
- Pour the batter into a greased 9-inch baking dish and bake at 350°F (175°C) for 35 to 40 minutes, checking for doneness with a toothpick.
- Prepare the orange caramel sauce by melting sugar with orange juice in a saucepan, then whisk in cream, butter, and zest, simmering until smooth.
