  • 1 tsp baking soda
  • 1 1/2 cups (180g) grated carrots
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) fresh orange juice
  • 1/4 cup (60ml) heavy cream
  • 2 tbsp unsalted butter
  • Zest of 1 orange

Instructions

  1. Prepare the carrots and dates by washing, peeling, and grating the carrots, then soaking the chopped dates in boiling water with baking soda for 10 minutes.
  2. Mix the dry ingredients in a medium bowl: flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Cream together the butter and brown sugar in a large bowl, then add eggs one at a time and stir in vanilla extract.
  4. Fold in the grated carrots and soaked dates into the butter mixture, then gradually add the dry ingredients until just combined.
  5. Pour the batter into a greased 9-inch baking dish and bake at 350°F (175°C) for 35 to 40 minutes, checking for doneness with a toothpick.
  6. Prepare the orange caramel sauce by melting sugar with orange juice in a saucepan, then whisk in cream, butter, and zest, simmering until smooth.
