Description
A moist and flavorful loaf made with sweet dates and fresh carrots, topped with a rich maple cream.

- 1 cup (150g) pitted dates, chopped
- 1 cup (240ml) boiling water
- 1 tsp baking soda
- 1 cup (130g) grated carrots
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 1/4 cups (160g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Pinch of salt
For the maple cream topping:
- 1 cup (240ml) heavy cream
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it and lining it with parchment paper.
- In a medium bowl, mix the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Fold in the grated carrots and soaked dates into the wet mixture.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick comes out clean.
- While the loaf is baking, whip the heavy cream until soft peaks form, then fold in the maple syrup and vanilla extract.
- Once the loaf is baked and slightly cooled, serve it with the maple cream topping.
Notes
- Store the loaf wrapped tightly to keep it fresh for up to three days at room temperature.
- For longer storage, freeze the loaf or slices individually.
