- 2 cups (250g) finely grated carrots
- 1 cup (150g) chopped pitted dates
- 1 cup (120g) chopped pecans, toasted
- 1 cup (240ml) whole milk
- ½ cup (120ml) heavy cream
- 3 large eggs
- ¾ cup (150g) light brown sugar
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp salt
For the Citrus Syrup:
- ½ cup (120ml) freshly squeezed orange juice
- ¼ cup (50g) granulated sugar
- 1 tbsp lemon juice
- 1 tsp finely grated orange zest
Instructions
- Prepare the carrots and dates by washing, peeling, and finely grating the carrots, and chopping the dates.
- Mix the dry ingredients by sifting together flour, baking powder, cinnamon, ginger, nutmeg, and salt.
- Combine the wet ingredients by whisking eggs, brown sugar, milk, cream, and vanilla until smooth.
- Fold the dry mixture into the wet mixture gently, then add the carrots, dates, and toasted pecans.
- Preheat the oven to 325°F (160°C) and prepare a baking dish with butter or cooking spray. Pour the batter into the dish and bake in a bain-marie for 45-55 minutes.
- Prepare the citrus syrup by simmering orange juice, sugar, lemon juice, and orange zest in a saucepan until thickened.
- Let the pudding cool slightly before serving, drizzling the warm citrus syrup over each portion.
