Instructions
- Prepare the butternut squash by peeling, cubing, and boiling or steaming until tender, then mash until smooth.
- Mix the dry ingredients: whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt in a separate bowl.
- Combine the wet ingredients: mix butternut squash puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Pour the batter into a prepared loaf pan and smooth the top. Bake in a preheated oven at 350°F (175°C) for 55-65 minutes or until a toothpick comes out clean.
