Description

  • 150g (3/4 cup) chopped dates
  • 2 large eggs
  • 100g (1/2 cup) brown sugar
  • 80ml (1/3 cup) neutral oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 180g (1 1/2 cups) all-purpose flour
  • Optional: chopped walnuts for topping or folding in

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a loaf tin or 8-inch round cake pan with parchment paper.
  2. In a large bowl, mash the bananas thoroughly. Add eggs, brown sugar, oil or butter, and vanilla extract. Whisk until combined and smooth.
  3. In a separate bowl, whisk together the flour, cinnamon, cardamom, baking soda, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Fold in chopped dates and optional walnuts.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Do not overmix the batter to avoid a dense texture.
  • Tent with foil during the last 10–15 minutes if the cake is browning too quickly.
  • Rest the batter for 10 minutes before baking for extra moistness.
