Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry mixture to the butter mixture, alternating with the buttermilk, and mix until just combined. Fold in the diced apples.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.
