Description
Spiced Apple Gingerbread Pancakes are a warm and cozy breakfast option that combines the sweetness of apples with the warm spices of gingerbread, perfect for fall mornings.
Ingredients
- All-purpose flour: 1 cup (120 g)
- Baking powder: 2 teaspoons
- Ground ginger: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/4 teaspoon
- Brown sugar: 1/4 cup (50 g)
- Milk: 1 cup (240 ml)
- Eggs: 2 large
- Grated apple: 1 medium apple (about 1 cup, 120 g)
- Maple syrup: for serving
Instructions
- Prepare the dry ingredients by whisking together flour, baking powder, ginger, cinnamon, nutmeg, and brown sugar in a large bowl.
- In a separate bowl, beat the eggs and then add the milk, mixing until well combined.
- Gradually pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the grated apple.
- Heat a non-stick skillet over medium heat, lightly greasing it. Pour about 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Remove from skillet, stack on a plate, drizzle with maple syrup, and serve warm.
Notes
- Choose sweet and slightly tart apples like Granny Smith, Honeycrisp, or Fuji for the best flavor.
- Adjust spice levels according to your taste preference.
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- For a vegan alternative, replace eggs with flaxseed meal or chia seeds and use plant-based milk.
