Ingredients

  • 1 cup (150g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (60g) chopped walnuts

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line an 8-inch square pan with parchment paper.
  2. Place chopped dates in a bowl and pour boiling water over them. Let soak for 10 minutes to soften.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, allspice, cloves, and salt.
  4. Cream butter and brown sugar until light and fluffy using an electric mixer.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and softened dates (mash slightly if needed).
  6. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  7. Fold in chopped walnuts evenly.
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 35-40 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
