Description
A delightful pumpkin bread recipe that combines rich pumpkin flavor with warm spices, perfect for fall.
Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- ½ cup vegetable oil
- 2 large eggs
- 1 cup canned pumpkin puree
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Stir until blended, then add eggs one at a time, mixing well after each addition. Add pumpkin puree and vanilla extract, mixing until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Fold in nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, checking for doneness with a toothpick.
- Once baked, let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
Notes
- Overmixing can lead to dense bread; stir just until combined.
- Use pure pumpkin puree, not pumpkin pie filling.
- Measure ingredients accurately for best results.
- Allow cooling time to prevent breaking when removing from the pan.
- Check for doneness with a toothpick.
