Description

  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice or a mix of cinnamon and nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. In a large mixing bowl, combine the sourdough starter, pumpkin puree, vegetable oil (or melted butter), eggs, brown sugar, and vanilla extract. Whisk until smooth.
  2. In another bowl, mix the dry ingredients: flour, baking soda, baking powder, pumpkin pie spice (or your chosen spice mix), and salt. Stir well.
  3. Gradually add the dry mixture into the wet mixture. Fold gently until just combined. Do not overmix.
  4. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners. Fill each muffin cup about two-thirds full with batter.
  5. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
