Instructions

  1. Prepare the sourdough starter by feeding it with equal parts flour and water 4 to 6 hours before baking.
  2. In a large mixing bowl, combine the bread flour and salt. In another bowl, mix the lukewarm water with the bubbly sourdough starter, then combine with the flour mixture.
  3. Knead the dough for about 10 minutes until smooth and elastic, or use the stretch and fold method.
  4. Place the dough in a greased bowl, cover, and let it rise for 4 to 6 hours until doubled in size, performing stretch and folds every 30 minutes for the first 2 hours.
  5. Shape the dough into a round loaf and let it rest for 15-20 minutes.
  6. Shape the dough again and place it seam-side up in a floured proofing basket. Cover and let it rise for 1 to 2 hours, or refrigerate overnight.
  7. Preheat the oven to 450°F (230°C) and bake the dough in a preheated Dutch oven for 30 minutes covered, then 15-20 minutes uncovered until golden brown.
