Description

Ultimate Snickers Cupcakes are rich chocolate cupcakes topped with creamy peanut butter frosting, caramel drizzle, and chopped Snickers bars. They are perfect for parties, celebrations, or satisfying a serious sweet tooth.

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder

  • 2 large eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/3 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1/2 cup buttermilk
  • 5 tablespoons unsalted butter (softened to room temperature)
  • 1 cup creamy peanut butter
  • 1 cup confectioners sugar
  • 1/3 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup store-bought or homemade caramel sauce
  • 56 fun size Snickers bars (chopped)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with liners. Line 2 more liners in a second pan for 14 total cupcakes.
  2. In a large bowl, whisk cocoa powder, flour, baking soda, baking powder, and salt.
  3. In another bowl, whisk eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth. Add buttermilk and mix well.
  4. Combine half the wet mixture into the dry ingredients. Stir gently 5 times, then add remaining wet ingredients and fold until just combined.
  5. Fill cupcake liners halfway with batter and bake for 18-19 minutes, or until a toothpick comes out clean. Cool completely before frosting.
  6. To make the frosting, beat softened butter until creamy. Add peanut butter and mix until smooth.
  7. Gradually add confectioners sugar, heavy cream, vanilla extract, and salt. Beat on low, then high until fluffy.
  8. Frost the cooled cupcakes using a piping bag or spatula.
  9. Drizzle with caramel sauce and top with chopped Snickers pieces.
