Description

S’mores cupcakes are a delicious handheld dessert combining moist chocolate cake, fluffy toasted meringue frosting, and crunchy graham cracker crumbs for a nostalgic campfire flavor.


Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 3/4 cup semisweet chocolate chips
  • 5 graham crackers

Instructions

  1. Preheat oven to temperature indicated on cake mix box and line a 12-cup muffin tin with paper liners.
  2. Prepare cake batter according to box instructions; divide batter evenly into muffin cups, filling each two-thirds full.
  3. Bake cupcakes 18-20 minutes or until a toothpick inserted comes out clean; cool completely on wire rack.
  4. Prepare meringue frosting by heating water to simmer; whisk egg whites and sugar over double boiler until warm and sugar dissolves.
  5. Beat mixture on high speed until soft peaks form, about 8 minutes; add vanilla and salt; transfer to piping bag with large star tip.
  6. Melt chocolate chips over simmering water until smooth; keep warm.
  7. Break 2 graham crackers into 1-inch squares for garnish; crush remaining 3 crackers into fine crumbs.
  8. Dip cooled cupcake edges in melted chocolate, then coat with graham cracker crumbs.
  9. Pipe meringue frosting generously on top of each cupcake.
  10. Broil cupcakes 30 seconds until frosting is golden brown, watching carefully to avoid burning.
