S’mores Chocolate Mousse is a rich and creamy dessert combining classic s’mores flavors—chocolate, toasted marshmallows, and graham crackers—in a light, airy mousse that’s perfect for any occasion.

  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 2 cups heavy cream, divided

  • 1 cup graham cracker crumbs
  • 4 large egg whites
  • 1 cup granulated sugar (for marshmallow topping)
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon pure vanilla extract (for marshmallow topping)

Instructions

  1. Whisk egg yolks, 1/4 cup sugar, and salt until smooth in a medium bowl. Set aside.
  2. Simmer 3/4 cup heavy cream in a saucepan over medium heat, then reduce heat to low.
  3. Temper egg yolks by slowly whisking in 1/4 cup warm cream, then pour mixture back into saucepan.
  4. Cook over low heat, stirring constantly for about 3 minutes until thickened and reaches 160°F. Remove from heat and stir in vanilla. Cool slightly.
  5. Melt chopped chocolate using double boiler or microwave, stirring until smooth.
  6. Stir melted chocolate into cooled egg yolk mixture until combined.
  7. Whip remaining 1 1/4 cups heavy cream to medium peaks, then gently fold into chocolate mixture.
  8. Layer graham cracker crumbs and chocolate mousse alternately in serving glasses until filled.
  9. Cover and refrigerate for at least 3 hours or overnight.
  10. For marshmallow topping, whisk egg whites, 1 cup sugar, and cream of tartar over simmering water until sugar dissolves (about 4 minutes).
  11. Remove from heat, add vanilla, and beat on high speed until stiff, glossy peaks form (about 5 minutes).
  12. Spoon marshmallow topping over chilled mousse; optionally torch topping for a toasted effect.
