Instructions
- Whisk egg yolks, 1/4 cup sugar, and salt until smooth in a medium bowl. Set aside.
- Simmer 3/4 cup heavy cream in a saucepan over medium heat, then reduce heat to low.
- Temper egg yolks by slowly whisking in 1/4 cup warm cream, then pour mixture back into saucepan.
- Cook over low heat, stirring constantly for about 3 minutes until thickened and reaches 160°F. Remove from heat and stir in vanilla. Cool slightly.
- Melt chopped chocolate using double boiler or microwave, stirring until smooth.
- Stir melted chocolate into cooled egg yolk mixture until combined.
- Whip remaining 1 1/4 cups heavy cream to medium peaks, then gently fold into chocolate mixture.
- Layer graham cracker crumbs and chocolate mousse alternately in serving glasses until filled.
- Cover and refrigerate for at least 3 hours or overnight.
- For marshmallow topping, whisk egg whites, 1 cup sugar, and cream of tartar over simmering water until sugar dissolves (about 4 minutes).
- Remove from heat, add vanilla, and beat on high speed until stiff, glossy peaks form (about 5 minutes).
- Spoon marshmallow topping over chilled mousse; optionally torch topping for a toasted effect.
