Description

Delightful cookies that combine the classic flavors of s’mores with soft chocolate chip cookies, featuring melted chocolate, gooey marshmallows, and crunchy graham crackers.


Ingredients

  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup packed light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/4 cup semi-sweet chocolate chips
  • 12 regular marshmallows, cut in half
  • One 4-ounce semi-sweet chocolate bar, finely chopped
  • 1/3 cup crushed graham cracker crumbs

Instructions

  1. In a large mixing bowl, beat together softened butter, brown sugar, and granulated sugar for about 2 minutes until creamy.
  2. Add in the egg and vanilla extract, and beat until fully combined.
  3. In a separate bowl, mix together flour, cornstarch, baking soda, and salt, then pour into the wet mixture, stirring until just combined.
  4. Gently fold in the chocolate chips.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F. Roll cookie dough into balls and place on lined baking sheets.
  7. Bake for about 10-11 minutes until edges are golden but the middles still look soft.
  8. Switch oven to broil, top each cookie with half a marshmallow, and broil for 1-2 minutes until golden.
  9. Remove from oven, drizzle with melted chocolate, and sprinkle with graham cracker crumbs.
  10. Let set before serving.
