- 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 24–25 large marshmallows
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pie dish to form crust.
- In a bowl, melt 1/2 cup butter. Mix in oil and 1 cup sugar. Add eggs, egg yolk, and vanilla extract; whisk until smooth.
- Sift in cocoa powder, flour, and salt. Stir until just combined. Fold in chocolate chips.
- Pour brownie batter into crust and spread evenly. Bake for 30 minutes.
- Remove pie and top with marshmallows. Bake 3 more minutes or broil until golden brown—watch closely.
- Let cool for 45 minutes to 2 hours. For clean slices, use a hot knife.
