- 1 and 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1/2 cup unsalted butter
- 2 tablespoons vegetable oil or melted coconut oil
- 1 cup granulated sugar
- 2 large eggs
- 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 24–25 large marshmallows
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and sugar, then mix in melted butter and press into a pie dish to form the crust.
- Melt the unsalted butter and stir in oil and granulated sugar. Let sit to cool, then whisk in eggs and vanilla.
- Sift in cocoa powder, flour, and salt into the mixture, blending until smooth. Fold in chocolate chips.
- Spoon brownie batter into the crust and spread evenly. Bake for 30 minutes, then add marshmallows and bake for an additional 3 minutes.
- Let cool for at least 45 minutes before slicing and serving.
Notes
For best results, let the pie cool completely before slicing to keep the layers intact. Serve with ice cream or whipped cream for extra indulgence.
