Description

Delightful S’mores Brownie Cupcakes combining chocolate, graham crackers, and fluffy meringue for a perfect dessert.


Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1/2 cup unsalted butter
  • 2 (4-ounce) semi-sweet chocolate bars, coarsely chopped
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 3 large egg whites, at room temperature
  • 3/4 cup granulated sugar (for meringue)
  • 1/8 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract (for meringue)

Instructions

  1. Preheat the oven to 350°F and prepare muffin pans with cupcake liners.
  2. Make the crust by mixing graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
  3. Melt the remaining butter and chocolate; whisk in sugar, eggs, and vanilla, then mix in flour, cocoa powder, and salt.
  4. Spoon brownie batter into the liners over the crusts; bake for 25-28 minutes.
  5. Prepare the meringue by whisking egg whites, sugar, and cream of tartar over simmering water until dissolved; beat until stiff peaks form.
  6. Pipe meringue over cooled cupcakes and optionally toast the topping.

Notes
