- 1 and 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1/2 cup unsalted butter
- 2 (4-ounce) semi-sweet chocolate bars, coarsely chopped
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 3 large egg whites, at room temperature
- 3/4 cup granulated sugar (for meringue)
- 1/8 teaspoon cream of tartar
- 1 teaspoon pure vanilla extract (for meringue)
Instructions
- Preheat the oven to 350°F and prepare muffin pans with cupcake liners.
- Make the crust by mixing graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
- Melt the remaining butter and chocolate; whisk in sugar, eggs, and vanilla, then mix in flour, cocoa powder, and salt.
- Spoon brownie batter into the liners over the crusts; bake for 25-28 minutes.
- Prepare the meringue by whisking egg whites, sugar, and cream of tartar over simmering water until dissolved; beat until stiff peaks form.
- Pipe meringue over cooled cupcakes and optionally toast the topping.

Notes
