A hearty slow cooker dish featuring chicken and beans with Tex Mex flavors.
Ingredients

- 2 pounds chicken breasts
- 1 can black beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
Instructions
- Place chicken breasts in the slow cooker.
- Add black beans, pinto beans, corn, diced tomatoes, and onion.
- Sprinkle taco seasoning over the top.
- Pour chicken broth over all ingredients.
- Stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving.

- Serve with tortillas or over rice.
- Top with cheese, avocado, or cilantro if desired.
