- 2 medium sweet potatoes (about 1 lb or 450 g)
- 1 can (15 oz or 425 g) black beans
- 1 can (14.5 oz or 410 g) diced tomatoes
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 4 cups chicken broth (about 1 liter)
- Salt and pepper to taste
- Optional toppings: Chopped cilantro, diced avocado, shredded cheese, or a dollop of sour cream
Instructions
- Gather your ingredients.
- Prepare the chicken and sweet potatoes by peeling and dicing the sweet potatoes and leaving the chicken breasts whole.
- Combine ingredients in the slow cooker, layering sweet potatoes, onion, garlic, black beans, diced tomatoes, and chicken.
- Set the slow cooker and let it cook on low for 6-8 hours or on high for 3-4 hours.
- After cooking, shred the chicken and stir everything together before serving with your favorite toppings.
