Description

Deliciously rich and gooey skillet brownies baked in a cast iron skillet, perfect for any gathering or cozy night in.


Ingredients

  • 3/4 cup unsalted butter
  • 2 tablespoons vegetable oil
  • 4 ounces bittersweet or semi-sweet chocolate, coarsely chopped
  • 1 and 1/2 cups granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons semi-sweet chocolate chips, divided

Instructions

  1. Melt the butter, vegetable oil, chopped chocolate, and granulated sugar together in a medium saucepan over medium heat, stirring continuously for about 5 minutes, or microwave until melted and smooth.
  2. Pour the chocolate mixture into a large mixing bowl and let it cool slightly for 5 minutes. Whisk in the eggs and vanilla extract.
  3. Add the cocoa powder, flour, and salt, stirring gently until just combined.
  4. Fold in 1 cup of chocolate chips, then pour the batter into a greased 10-inch cast iron skillet. Sprinkle the remaining 2 tablespoons of chocolate chips on top.
  5. Preheat oven to 350°F (177°C) and bake for 30-36 minutes. Check for doneness with a toothpick, then cool for 5 minutes before serving.

Notes

For serving, consider adding ice cream, salted caramel sauce, or drizzling with hot fudge. Store leftovers in an airtight container.
