Description

  • 1/4 cup fine cornmeal
  • 3 tablespoons granulated sugar

  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup cold buttermilk (plus more as needed)
  • 4 cups fresh or frozen mixed berries
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 large egg, beaten with 1 tablespoon milk (for egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. In a bowl, whisk together flour, cornmeal, sugar, and salt.
  2. Cut in cold butter using a pastry cutter or forks until the mixture resembles coarse crumbs.
  3. Stir in cold buttermilk until the dough just comes together, adding more as needed.
  4. Shape dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  5. In another bowl, mix berries, 1/4 cup sugar, cornstarch, and lemon juice. Set aside.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Roll chilled dough into a 12–14 inch circle on a floured surface. Transfer to baking sheet.
  8. Place berry mixture in the center, leaving a 2-inch border. Fold edges over filling.
  9. Brush dough edges with egg wash and sprinkle with coarse sugar.
  10. Bake for 28–32 minutes, or until crust is golden and filling is bubbly.
  11. Cool for 10 minutes before serving.
