- 4 cups fresh or frozen mixed berries
- 1/4 cup granulated sugar (for filling)
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 1 large egg, beaten with 1 tablespoon milk (for egg wash)
- Coarse sugar for sprinkling
Instructions
- In a bowl, whisk together flour, cornmeal, sugar, and salt.
- Cut in cold butter using a pastry cutter or forks until the mixture resembles coarse crumbs.
- Stir in cold buttermilk until the dough just comes together, adding more as needed.
- Shape dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
- In another bowl, mix berries, 1/4 cup sugar, cornstarch, and lemon juice. Set aside.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Roll chilled dough into a 12–14 inch circle on a floured surface. Transfer to baking sheet.
- Place berry mixture in the center, leaving a 2-inch border. Fold edges over filling.
- Brush dough edges with egg wash and sprinkle with coarse sugar.
- Bake for 28–32 minutes, or until crust is golden and filling is bubbly.
- Cool for 10 minutes before serving.
