Ingredients

  • 1 lb (450 g) cooked shrimp: peeled and deveined
  • 2 cups (400 g) jasmine rice
  • 2 ripe avocados: sliced
  • 1 cucumber: thinly sliced
  • 6 radishes: thinly sliced
  • 4 green onions: chopped
  • 2 tablespoons sesame seeds
  • 1/2 cup (120 ml) mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon lime juice
  • Salt and pepper: to taste
  • Olive oil: for cooking the shrimp

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let the rice sit covered for an additional 5 minutes, then fluff with a fork.
  4. In a skillet, heat a tablespoon of olive oil over medium heat and add the cooked shrimp. Season with salt and pepper, sauté for 3 to 5 minutes until warm.
  5. In a small bowl, mix mayonnaise, sriracha sauce, and lime juice to make the spicy mayo.
  6. Assemble the bowls by dividing the rice, topping with shrimp, avocado, cucumber, radishes, and green onions.
  7. Drizzle spicy mayo over each bowl and sprinkle with sesame seeds.
