- 1 lb (450 g) cooked shrimp: peeled and deveined
- 2 cups (400 g) jasmine rice
- 2 ripe avocados: sliced
- 1 cucumber: thinly sliced
- 6 radishes: thinly sliced
- 4 green onions: chopped
- 2 tablespoons sesame seeds
- 1/2 cup (120 ml) mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon lime juice
- Salt and pepper: to taste
- Olive oil: for cooking the shrimp
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium pot, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let the rice sit covered for an additional 5 minutes, then fluff with a fork.
- In a skillet, heat a tablespoon of olive oil over medium heat and add the cooked shrimp. Season with salt and pepper, sauté for 3 to 5 minutes until warm.
- In a small bowl, mix mayonnaise, sriracha sauce, and lime juice to make the spicy mayo.
- Assemble the bowls by dividing the rice, topping with shrimp, avocado, cucumber, radishes, and green onions.
- Drizzle spicy mayo over each bowl and sprinkle with sesame seeds.
