Description

A quick and delicious shrimp fried rice recipe that combines tender shrimp, vibrant vegetables, and perfectly cooked jasmine rice.


Ingredients

  • Cooked shrimp: 1 cup, peeled and deveined
  • Jasmine rice: 2 cups, cooked and cooled (preferably day-old)
  • Peas: 1/2 cup (fresh or frozen)
  • Carrots: 1/2 cup, diced
  • Green onions: 3, sliced (white and green parts separated)
  • Garlic: 3 cloves, minced
  • Soy sauce: 3 tablespoons
  • Sesame oil: 2 tablespoons
  • Eggs: 2, beaten
  • Salt and pepper: to taste
  • Vegetable oil: 2 tablespoons (for cooking)

Instructions

  1. Prepare all ingredients: ensure shrimp is cooked, rice is cooled, and vegetables are diced and sliced.
  2. Heat a large skillet or wok over medium-high heat and add vegetable oil.
  3. Add cooked shrimp and stir-fry for about 2 minutes until heated through, then set aside.
  4. Add diced carrots to the pan and stir-fry for 2-3 minutes, then add minced garlic and white parts of green onions, cooking for another minute.
  5. Push shrimp and vegetables to one side, pour beaten eggs into the cleared area, and scramble until fully cooked.
  6. Add cooled jasmine rice, breaking up clumps, and stir everything together until well combined.
  7. Pour soy sauce and sesame oil over the mixture, stir to combine, and season with salt and pepper to taste.
  8. Gently fold in peas and green parts of green onions, cooking for an additional 1-2 minutes until heated through.
  9. Remove from heat and transfer to a serving dish, garnishing with extra green onions if desired.

Notes

  • Day-old rice works best to prevent clumping.
  • Feel free to customize with additional vegetables or proteins.
  • For a spicier version, add chili sauce or fresh chili peppers.
