- 1 cup (240g) plain Greek yogurt
- ¾ cup (150g) granulated sugar

- Zest of 2 lemons
For the lemon drizzle:
- 1 cup (120g) powdered sugar
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
Instructions
- Gather all your ingredients and measure them out.
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the semolina, baking powder, baking soda, salt, and lemon zest.
- In a separate large bowl, beat the eggs and sugar until creamy. Add the yogurt and oil, mixing well.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Pour the batter into a greased and lined 8-inch round cake pan and smooth the surface.
- Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the lemon drizzle by whisking together powdered sugar, lemon juice, and lemon zest until smooth.
- Poke holes in the cooled cake and drizzle the lemon mixture over the top. Allow it to set before serving.
