- 1 cup (160g) fine semolina
- 1 cup (240g) plain Greek yogurt
- ¾ cup (150g) granulated sugar
- 3 large eggs
- ½ cup (120ml) vegetable oil
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- Zest of 2 blood oranges
For the glaze:
- ½ cup (120ml) fresh blood orange juice
- 1 cup (120g) powdered sugar
- 1 tbsp blood orange zest (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine fine semolina, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, beat eggs and granulated sugar until light and fluffy (about 2-3 minutes).
- Add Greek yogurt and vegetable oil to the egg mixture and stir until smooth.
- Fold in the blood orange zest into the batter.
- Gradually add the dry mixture to the wet mixture, folding gently to combine.
- Pour the batter into a prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together fresh blood orange juice and powdered sugar until smooth. Add optional zest if desired.
- Once the cake is cool, pour the glaze over the top and let it set before slicing.
