Ingredients

  • 1 cup (240g) plain Greek yogurt
  • ¾ cup (150g) granulated sugar
  • 3 large eggs
  • ½ cup (120ml) vegetable oil
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Zest of 2 blood oranges

For the glaze:

  • ½ cup (120ml) fresh blood orange juice
  • 1 cup (120g) powdered sugar
  • 1 tbsp blood orange zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine fine semolina, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In another bowl, beat eggs and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Add Greek yogurt and vegetable oil to the egg mixture and stir until smooth.
  5. Fold in the blood orange zest into the batter.
  6. Gradually add the dry mixture to the wet mixture, folding gently to combine.
  7. Pour the batter into a prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, whisk together fresh blood orange juice and powdered sugar until smooth. Add optional zest if desired.
  11. Once the cake is cool, pour the glaze over the top and let it set before slicing.
