Ingredients
- Cheese tortellini: 12 oz (fresh or frozen)
- Thinly sliced steak: 1 lb (ribeye or sirloin)
- Bell peppers: 1 cup, sliced
- Onions: 1 cup, sliced
- Provolone cheese: 1 cup, shredded
- Heavy cream: 1 cup
- Garlic: 3 cloves, minced
- Italian seasoning: 1 teaspoon
- Olive oil: 2 tablespoons
- Salt and pepper: to taste
- Fresh parsley: for garnish (optional)
Instructions
- Cook the cheese tortellini in a large pot of salted boiling water according to package instructions, about 3-5 minutes, until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté sliced onions and bell peppers for 5-7 minutes until soft and caramelized. Season with salt and pepper, then remove from skillet.
- In the same skillet, add thinly sliced steak, season with salt, pepper, and Italian seasoning. Cook for 3-5 minutes until browned, then remove from skillet.
- Lower the heat and add minced garlic to the skillet, sauté for 30 seconds. Pour in heavy cream and bring to a gentle simmer. Stir in shredded provolone cheese until melted and smooth.
- Add cooked tortellini, sautéed vegetables, and steak back into the skillet. Toss gently until well coated and heated through.
- Serve warm, garnished with fresh parsley if desired.
