Ingredients

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 4 large eggs

  • 1 ½ cups shredded coconut, toasted
  • 1 cup chocolate chips (semi-sweet or dark)
  • A pinch of salt
  • ½ cup caramel sauce (store-bought or homemade)
  • Additional toasted coconut for garnish
  • Melted chocolate for drizzling

Instructions

  1. Prepare the crust mixture by combining graham cracker crumbs, melted butter, sugar, and salt in a bowl until it resembles wet sand.
  2. Press the crust mixture into the bottom of a 9-inch springform pan and bake at 325°F (160°C) for about 10 minutes. Let it cool completely.
  3. In a large mixing bowl, beat softened cream cheese until smooth, then gradually add sugar and mix until creamy.
  4. Add eggs one at a time, mixing well after each addition, then mix in vanilla extract. Fold in toasted coconut and chocolate chips.
  5. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  6. Bake the cheesecake for 55-60 minutes until the edges are set and the center is slightly jiggly. Turn off the oven and let it cool inside for an hour.
  7. After cooling, refrigerate the cheesecake for at least 4 hours or overnight.
  8. Before serving, drizzle with caramel sauce and melted chocolate, and sprinkle with additional toasted coconut.
