- 1/4 cup salted caramel sauce (store-bought or homemade)
- Coarse sea salt, for garnish
Instructions
- Prepare the crust by mixing flour, oats, brown sugar, granulated sugar, baking powder, baking soda, and salt. Add melted butter and mix until crumbly. Press into an 8×8-inch baking pan.
- Make the pumpkin filling by whisking together pumpkin puree, sweetened condensed milk, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
- If making your own salted caramel sauce, combine sugar and water in a saucepan, boil until golden, then add butter, cream, and a pinch of salt.
- Pour the pumpkin filling over the baked crust, drizzle with salted caramel sauce, and swirl gently with a knife.
- Bake for an additional 25-30 minutes until the filling is set and a toothpick comes out clean.
- Cool in the pan for at least 30 minutes, then slice and sprinkle with coarse sea salt before serving.

- Can be frozen for up to three months; thaw in the refrigerator or at room temperature.
