Ingredients

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree (canned or fresh)
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup salted caramel sauce (store-bought or homemade)
  • Coarse sea salt, for garnish

Instructions

  1. Prepare the crust by mixing flour, oats, brown sugar, granulated sugar, baking powder, baking soda, and salt. Add melted butter and mix until crumbly. Press into an 8×8-inch baking pan.
  2. Make the pumpkin filling by whisking together pumpkin puree, sweetened condensed milk, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  3. If making your own salted caramel sauce, combine sugar and water in a saucepan, boil until golden, then add butter, cream, and a pinch of salt.
  4. Pour the pumpkin filling over the baked crust, drizzle with salted caramel sauce, and swirl gently with a knife.
  5. Bake for an additional 25-30 minutes until the filling is set and a toothpick comes out clean.
  6. Cool in the pan for at least 30 minutes, then slice and sprinkle with coarse sea salt before serving.
