  • 4 corn tortillas, cut into strips
  • 1 avocado, diced
  • 1 cup queso fresco, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Gather all your ingredients.
  2. Prepare the base by combining tomatillos, jalapeños, garlic, onion, and salt in a pot with water. Boil and then simmer for 10 minutes.
  3. Drain and blend the mixture with cilantro and lime juice until smooth.
  4. Cut corn tortillas into strips and fry in olive oil until golden and crispy.
  5. In a large pot, heat olive oil, add the blended tomatillo mixture, and cook for 5 minutes. Then add chicken broth and simmer for 10-15 minutes.
