- 3/4 cup (150g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 3 large eggs
- 1/2 cup (120ml) fresh orange juice
- 1/2 cup (60g) shelled pistachios, chopped
- 1/3 cup (100g) honey
- 1 tbsp fresh orange juice
Instructions
- Soak saffron threads in warm milk for about 10 minutes.
- In a medium bowl, whisk together flour, baking powder, salt, and orange zest.
- Cream butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in saffron-infused milk and orange juice.
- Gradually add dry ingredients to wet ingredients, mixing gently until just combined.
- Fold in chopped pistachios and saffron infusion.
- Pour batter into a prepared 8-inch round cake pan and smooth the top.
- Bake in a preheated oven at 350°F (175°C) for 35-40 minutes or until a toothpick comes out clean.
- Prepare honey drizzle by warming honey and orange juice in a small saucepan.
- Let the cake cool for 10 minutes, then drizzle with honey mixture before serving.
