Ingredients

  • Zest of 2 large oranges
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 3 large eggs
  • 1/2 cup (120ml) fresh orange juice
  • 1/2 cup (60g) shelled pistachios, chopped
  • 1/3 cup (100g) honey
  • 1 tbsp fresh orange juice

Instructions

  1. Soak saffron threads in warm milk for about 10 minutes.
  2. In a medium bowl, whisk together flour, baking powder, salt, and orange zest.
  3. Cream butter and sugar in a large bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in saffron-infused milk and orange juice.
  5. Gradually add dry ingredients to wet ingredients, mixing gently until just combined.
  6. Fold in chopped pistachios and saffron infusion.
  7. Pour batter into a prepared 8-inch round cake pan and smooth the top.
  8. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes or until a toothpick comes out clean.
  9. Prepare honey drizzle by warming honey and orange juice in a small saucepan.
