  • 1 1/2 cups (240g) semolina
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (240ml) plain yogurt
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp rosewater
  • 1/4 cup (35g) chopped pistachios
  • 1/4 cup (35g) chopped almonds
  • Whole pistachios or almonds for topping
  • 1 cup (200g) sugar
  • 1/2 cup (120ml) water
  • 1 tbsp rosewater
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking dish.
  2. In a large mixing bowl, combine semolina, all-purpose flour, sugar, and baking powder.
  3. Add melted butter, yogurt, vanilla extract, and rosewater to the dry ingredients and mix until smooth.
  4. Gently fold in chopped pistachios and almonds.
  5. Pour the batter into the greased baking dish, score the surface, and top with whole nuts.
  6. Bake for 35 to 40 minutes until golden brown.
  7. Prepare the syrup by simmering sugar, water, and lemon juice, then stir in rosewater.
  8. Pour warm syrup over the hot Basbousa and let it absorb before serving.
