Description

Robin’s Egg Oreo Macarons are charming treats that resemble robin’s eggs, perfect for spring celebrations. They feature a delicious Oreo filling that complements the light macaron shells.

Ingredients

  • Almond Flour: 100 grams
  • Powdered Sugar: 100 grams
  • Egg Whites: 75 grams (about 2-3 large eggs, aged)
  • Granulated Sugar: 100 grams
  • Cream of Tartar: 1/4 teaspoon
  • Vanilla Extract: 1/2 teaspoon
  • Blue Food Coloring: 1/2 teaspoon (gel or liquid)
  • Cocoa Powder: 1/4 teaspoon

Instructions

  1. Sift almond flour and powdered sugar together in a mixing bowl.
  2. Beat egg whites with an electric mixer until foamy, then add cream of tartar and continue beating until soft peaks form.
  3. Gradually add granulated sugar while beating on high speed until stiff peaks form and the mixture is glossy.
  4. Add vanilla extract and blue food coloring, mixing gently until combined.
  5. Transfer the batter to a piping bag and pipe small circles onto prepared baking sheets.
  6. Let the piped macarons rest at room temperature for 30-60 minutes.
  7. Preheat the oven to 300°F (150°C) and bake the macarons for 15-18 minutes, rotating halfway through.
  8. Let the macarons cool completely on the baking sheets.
  9. Prepare the Oreo filling by beating cream cheese and butter until smooth, then add powdered sugar and vanilla extract, mixing until creamy.
  10. Fold in crushed Oreo cookies until well combined.
  11. Assemble the macarons by pairing shells, piping filling onto one shell, and sandwiching with another shell.
  12. Refrigerate assembled macarons for at least 24 hours before serving.

Notes

  • Ensure egg whites are aged for better meringue stability.
  • Be gentle when folding dry ingredients into the meringue to avoid deflation.
  • Allow piped macarons to rest to form a skin before baking.
  • Use an oven thermometer to ensure accurate baking temperature.
  • Store assembled macarons in an airtight container in the refrigerator.
