Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and golden, stirring halfway through.
- Warm the corn tortillas in a skillet or microwave.
- Assemble the tacos with roasted sweet potatoes, black beans, and avocado slices.
- Garnish with cilantro and serve with lime wedges.
