- 2 cloves garlic, minced
- 4 cups (1 liter) vegetable broth
- 1 cup (240ml) coconut milk
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Fresh herbs (such as parsley or cilantro) for garnish
Instructions
- Peel and dice the sweet potatoes and apples.
- Preheat the oven to 400°F (200°C) and toss the sweet potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes.
- In a pot, heat remaining olive oil and sauté the onion for 5 minutes, then add garlic and sauté for another minute.
- Add roasted sweet potatoes and apples to the pot, pour in vegetable broth, and simmer for 15-20 minutes.
- Blend the soup until smooth, then stir in coconut milk and adjust seasoning.
- Serve garnished with fresh herbs and a swirl of coconut milk.
