  • 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups (1 liter) vegetable broth
  • 1 cup (240ml) coconut milk
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (such as parsley or cilantro) for garnish

Instructions

  1. Peel and dice the sweet potatoes and apples.
  2. Preheat the oven to 400°F (200°C) and toss the sweet potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes.
  3. In a pot, heat remaining olive oil and sauté the onion for 5 minutes, then add garlic and sauté for another minute.
  4. Add roasted sweet potatoes and apples to the pot, pour in vegetable broth, and simmer for 15-20 minutes.
