Description
Creamy and fruity Roasted Strawberry Popsicles made with roasted strawberries, sweetened condensed milk, and heavy cream. A perfect summer treat!

- 1 pound strawberries
- 3 tablespoons granulated sugar
- 1 (14-ounce) can sweetened condensed milk
- 3/4 cup heavy cream
- 1/2 cup whole milk
- 1/2 teaspoon pure vanilla extract
- Cooking spray for pop mold
Instructions
- Preheat oven to 325°F. Rinse, dry, and quarter the strawberries.
- Toss strawberries with granulated sugar and place on a baking sheet.
- Roast for 35–40 minutes until soft and jammy. Let them cool completely.
- In a large bowl, whisk sweetened condensed milk, heavy cream, whole milk, and vanilla until smooth.
- Spray popsicle molds lightly with cooking spray.
- Spoon about 10 pieces of roasted strawberries into each mold, then pour in cream mixture, leaving a little space at the top.
- Insert sticks and freeze for at least 6 hours, or until solid.
- To serve, run molds under warm water to release popsicles.
Notes
- Let roasted strawberries cool fully before adding to the mold to avoid melting the cream mixture.
- Use ripe strawberries for the best flavor.
- For easy removal, let popsicles sit at room temperature for 1–2 minutes before unmolding.
- Store in an airtight container or freezer bag for up to 2 months.
