Ingredients
- Fresh pears: 3 medium, peeled, cored, and sliced
- Fresh cranberries: 1 cup (about 120 grams)
- All-purpose flour: 1 ½ cups (190 grams)
- Unsalted butter: ½ cup (115 grams), chilled and cubed
- Granulated sugar: ¾ cup (150 grams), divided
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: ½ teaspoon
- Salt: ¼ teaspoon
- Ice water: 3 to 4 tablespoons
Instructions
- Prepare the pears and cranberries by peeling, coring, and slicing the pears, then rinsing the cranberries. Combine in a bowl with sugar, cinnamon, and nutmeg.
- Make the tart crust by mixing flour, sugar, and salt, then cutting in the butter until crumbly. Add ice water gradually until the dough forms.
- Chill the dough for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the dough and fit it into a tart pan.
- Fill the crust with the pear and cranberry mixture, arranging the pears attractively on top.
- Bake for 35-40 minutes until the crust is golden and the fruit is bubbling.
- Cool for at least 15 minutes before slicing and serving.
Notes
- Choose ripe but firm pears for the best texture.
- Cover crust edges with foil if they brown too quickly.
- Serve warm or at room temperature, optionally with ice cream or whipped cream.
