  • Unsalted butter: ½ cup (115 grams), chilled and cubed
  • Granulated sugar: ¾ cup (150 grams), divided
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Salt: ¼ teaspoon
  • Ice water: 3 to 4 tablespoons

Instructions

  1. Prepare the pears and cranberries by peeling, coring, and slicing the pears, then rinsing the cranberries. Combine in a bowl with sugar, cinnamon, and nutmeg.
  2. Make the tart crust by mixing flour, sugar, and salt, then cutting in the butter until crumbly. Add ice water gradually until the dough forms.
  3. Chill the dough for at least 30 minutes.
  4. Preheat the oven to 375°F (190°C). Roll out the dough and fit it into a tart pan.
  5. Fill the crust with the pear and cranberry mixture, arranging the pears attractively on top.
  6. Bake for 35-40 minutes until the crust is golden and the fruit is bubbling.
  7. Cool for at least 15 minutes before slicing and serving.
