Ingredients
- Baby Potatoes: 1 kg (about 2 lbs)
- Garlic: 6 cloves, minced
- Unsalted Butter: 100 g (about 7 tablespoons)
- Grated Parmesan Cheese: 100 g (about 1 cup)
- Fresh Parsley: 2 tablespoons, chopped
- Olive Oil: 2 tablespoons
- Salt: to taste
- Black Pepper: to taste
Instructions
- Wash the baby potatoes thoroughly under cold water and pat them dry.
- In a small saucepan, melt the unsalted butter over low heat and add the minced garlic, cooking for 1-2 minutes.
- In a large mixing bowl, combine the washed baby potatoes with olive oil, salt, and black pepper, then toss to coat.
- Pour the melted garlic butter over the seasoned potatoes and toss again.
- Spread the coated potatoes on a baking sheet lined with parchment paper and roast in a preheated oven at 200°C (400°F) for 30-35 minutes, turning halfway through.
- Once roasted, sprinkle grated Parmesan cheese over the hot potatoes and toss gently. Serve warm, garnished with chopped fresh parsley.
