Ingredients
- Fresh carrots: 1 lb (about 450 grams), peeled and cut into sticks.
- Olive oil: 2 tablespoons.
- Maple syrup: 2 tablespoons.
- Tahini: 3 tablespoons.
- Lemon juice: 1 tablespoon (freshly squeezed).
- Garlic: 1 clove, minced.
- Salt: 1 teaspoon.
- Pepper: 1/2 teaspoon.
- Fresh parsley: for garnish (optional).
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the fresh carrots and cut them into sticks, about 1/2 inch thick.
- In a large bowl, combine the carrot sticks with olive oil, salt, and pepper. Toss well.
- Spread the seasoned carrots in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, stirring halfway through.
- While the carrots are roasting, prepare the maple tahini drizzle by whisking together tahini, maple syrup, lemon juice, minced garlic, and a pinch of salt. Adjust consistency with water if needed.
- Once the carrots are roasted, transfer them to a serving platter and drizzle the maple tahini sauce over them. Garnish with fresh parsley if desired.
